10 minute Shrimp and Vegetable Hot Pot

2 cups Chicken or Vegetable Broth
3 oz Trader Joe's Large Shrimp, Tail-Off (12 shrimp)
1 cup Trader Joe's Stir-Fry Vegetables

Heat broth completely, drop in frozen vegetables, wait one minute and then add shrimp. Simmer for a few minutes and remove from heat. (If using pre-cooked, thawed shrimp, add and remove from heat immediately.)

Variations: add beaten egg white or drop whole egg into pot for an Asian Hot Pot style meal. Asian noodles can also be added if desired.

Great quick meal for those wanting a higher-protein, lower-carb meal at the end of a long day. I use low-sodium and/or fat-free broth. The 10 minutes includes getting stuff out of the freezer and opening bags :)
