Place the gingersnaps in a food processor and process until finely ground. Add butter and 2 tablespoons sugar, and process briefly until thoroughly combined. Press the mixture on the bottom and up the sides of a 9-inch deep dish pie plate. Bake for 15 minutes, or until lightly golden brown. Cool completely on rack. To make the filling, place the cream cheese in a medium bowl. Using an electric mixer, beat the cream cheese until smooth and creamy. Add the pumpkin butter, 1/4 cup sugar, and vanilla and beat until well blended. Gently fold in the whipped topping. Pour filling into cooled crust.
