Mojito Chicken with Rice and Beans

Create a fabulous Cuban style dinner using TJ’s Mojito simmer sauce as a base and let your slow cooker do all the work! 1 -12 ounce jar Trader Joe’s Cuban Mojito simmer sauce 2 pounds boneless chicken thighs 1 – can TJs Cuban Black Beans, heated 4 cups cooked TJs Arborio rice 1 fresh lime Open jar of Mojito sauce and remove 1/3 cup. Wash and pat dry the chicken thighs and place in bottom of slow cooker. Cover the chicken with the jar of Mojito simmer sauce. Set slow cooker on low and let cook for 6-8 hours. About three quarters of an hour before serving dinner prepare the rice and beans. To serve: heat the 1 /3 simmer sauce that was reserved. Slice up the lime. On a large platter layer the rice, beans and chicken thighs. Drizzle the chicken with the reserved Mojito sauce and garnish with the fresh limes. Let’s eat!

Muffin Tin Chicken Bruschetta Rolls

Muffin Tin Chicken Bruschetta Rolls 2 Trader Joe’s Spicy Italian Chicken Sausage links (fully cooked) 1-1 pound Trader Joe’s Garlic and Herb pizza dough 1-1 pound Trader Joe’s Plain pizza dough 1 cup Trader Joe’s Sundried Tomato Bruschetta, divided ˝ cup Trader Joe’s Parmesan cheese, freshly grated 1 tablespoon melted butter Preheat oven to 350 degrees . Grease 2 - 12 cup muffin tins Remove sausage from package and slice. Place slices into bowl of a food processor and finely grind. Add 1 /3 cup Bruschetta to the ground chicken and pulse until mixed. Set aside. Remove each dough form it’s packaging and roll into a ball. Slice each ball in half. Combine 1 piece from each ball and knead together. You now have 2 balls of mixed dough. Gently flour a work space. Roll out 1 ball of dough to a 10 X 12 inch rectangle. Remove 1 /2 of the meat mixture and spread across the dough. Sprinkle with 1 /4 cup cheese. Roll up – jelly roll style to produce a 12 inch log. Slice the log into 12 – inch pieces. (The easiest way is to slice in half to yield 2- 6 inch pieces, slice again (4 – 3 inch pieces and so on.) Place a piece into a cup of the muffin tin. Repeat with second ball of dough. Brush top with melted butter. Place in oven and bake 20-24 minutes or until golden brown. Remove from oven and place on a platter with the extra Bruschetta for topping. These quick and easy appetizers go well with fruit and a mix of raw vegetable crudités
