Soyaki Honey Apricot Glazed Chicken Legs 1/4 cup apricot jelly 1/2 cup honey 1/4 cup Trader Ming’s Soyaki sauce 6 chicken legs In a large bowl, mix apricot jelly, honey, Trader Ming’s Soyaki sauce. Place chicken legs in a gallon-sized ziplock bag. Pour sauce into bag and refrigerate 30-minutes to allow chicken to marinate. Preheat oven to 400°F. Line a large baking tray with heavy aluminum foil. Place chicken and sauce from the bag on the tray and bake for 20-minutes. Turn chicken over and continue to cook for another 20-minutes or until meat thermometer inserted in leg registers 180°F and juices are clear when a leg is pierced with a knife. Baste carmelized sauce over chicken legs and serve. Serves 6

Chocolate Toffee Cookies

1 ½ cups Trader Joe’s Semi Sweet Chocolate Chips 6 Tablespoons unsalted butter 3 eggs 1 cup sugar 1/3 cup flour ½ tsp baking powder 1 cup Trader Joe’s chocolate covered toffee, chopped 1 cup walnuts, chopped In a medium microwavable bowl, melt the semi sweet chocolate chips and the butter 20 – 30 seconds or until mixture can be stirred smooth. Be careful not to burn. If it isn’t melted, continue to microwave in 10 second intervals, stirring between each interval. Set aside to cool. In a large mixing bowl, beat the eggs and sugar with an electric mixer until thick. Blend in the cooled chocolate and followed by the flour and baking powder until incorporated. Mix in the chopped chocolate covered toffee and walnuts. Cover bowl with plastic wrap and refrigerate for 2 hours. Preheat oven to 350F. With a large spoon or ice cream scoop, drop 2-inch scoops of dough onto a parchment-lined cookie sheet approximately 2 inches apart. Bake 10-12 minutes or until tops of cookies start to crack. Cool cookies on a wire rack. Yields approximately 2 dozen
