4 Large Eggs
1 C Canola Oil
3/4 C sugar
2 cups of Trader Joe's Organic Canned Pumpkin
2 Cups Flour
2 t baking powder
1 t salt
2 t pumpkin pie spice
1 cup golden raisins
walnut halves(optional)
1) Buy ALL indredients at Trader Joe's
2)Come home and preheat oven to 350 degrees
3)In mixer, beat eggs until frothy. Beat in sugar and beat for about two minutes, until blended.
4)Beat the canola oil into the pumpkin and sugar miixture
5)Sift dry ingredients over the raisins and fold dry mixture into the egg mixture. Don't over mix.
6)Pour into a greased and floured 13" by 9" pan. bake in the preheated oven 35 to 40 minutes or until done through.
7)Cool on rack and cut into 24 squares that you can top each with a walnut half if you like.
Baking time will vary according to your oven but the finished product is wonderfully delicious and moist and dense. ENJOY!
