If you're a fan of Tex Mex, these are the enchiladas for you. Serves 4, muchos calories - but a great, filling meal. Serve it over shredded lettuce for an even more authentic Tex Mex dish.

This one of TJ's most economical entrees--it's like 2 lbs for $5. And it's tasty, if you love cheese, because it's very cheesy and saucy...like me, ha! Naturally, it's better baked than nuked, but just remember to thaw it out in advance.
