| Cuban Black Bean DipPopular |
2 Tablespoons vegetable oil
1 medium onion, diced (1-cup)
3 scallions, chopped (1/4 cup)
1 medium tomato, diced (1/2 cup)
1/4 teaspoon ground cumin
Salt and freshly ground pepper, to taste
1-can Trader Joe's Organic Black Beans, drained
1-4.5oz. can Chopped Green Chilies, drained
1/4 cup water
Garnish (optional):
1-teaspoon cilantro, chopped
Trader Joe's Spicy Black Bean Tortilla chips
In a small 10”nonstick skillet, heat oil on medium-high heat. Add onions, scallions, and tomato; sauté until soft and translucent, 5 minutes. Add cumin, salt, and pepper. Set aside while preparing beans.
Place black beans and chopped green chilies in a food processor. Process for 30 seconds. Scrape down sides of processor and add onion mixture and water. Process 1 minute until beans are smooth. Add more water if you want the texture to be smoother.
Place beans into a serving bowl and garnish with cilantro. Cover and refrigerate until ready to serve with tortilla chips.
