Roasted Corn and Pepper Soup

This soup comes in the tetra pack and is my 2nd favorite next to the Roasted Red Pepper and Tomato soup. It's an interesting color, but the sweetness of the corn is nicely offset by the spiciness poblano pepper. This soup is even better with some of the frozen fire roasted corn and fresh crab meat stirred in.

Yes, it's a weird color (kind of like baby poo) but it really is delicious. Nice bite from the pepper. Goes great with a quesadilla!

Adding the crab meat (Costco has wonderful King crab meat in a tub) and roasted corn. Then I thought it stilled needed a little something so I added just a tablespoon of the India Relish. YUM!
