| Chilled Orange and Pumpkin SoupPopular |
1 Tbsp canola oil
2 green onions, minced
1 large clove garlic, minced
1/2 tsp Trader Joe's Pumpkin Pie Spice
1/4 tsp crushed red pepper
4 cups vegetable or chicken broth
2 cups orange juice
2 cups Trader Joe's Organic Canned Pumpkin
3 ounces cream cheese, cubed, at room temperature
2 Tbsp snipped mint
1/2 tsp orange zest
garnish- chopped roasted salted peanuts
In a 4 quart pot heat the oil over medium high heat; add the onions, garlic, pumpkin pie spice and red pepper. Saute 3 minutes. Stir in the broth and orange juice. Bring to a boil, reduce the heat, cover and simmer 10 minutes. Place the soup in batches in a blender container along with the pumpkin, cream cheese, mint and zest. Blend till smooth. Place the soup in a tureen, cover and refrigerate till cold. At serving time ladle into bowls and garnish with the peanuts. Serves 8
