INGREDIENTS:
2 cups all purpose flour
2/3 cup light brown sugar (Trader Joe's)
3 teaspoons baking powder
½ teaspoon of salt
½ teaspoon ground cinnamon (Trader Joe's)
1 cup dried orange flavored cranberries (Trader Joe's)
1 cup sesame covered cashews (Trader Joe's)
2 tablespoons of orange zest
6 tablespoons of butter
1 organic extra large egg (Trader Joe's)
½ cup natural Silk Soy Milk (1-2 tablespoons more if needed)
2 tablespoons of natural orange juice
1 ½ teaspoons Mexican vanilla extract
PREPARATION:
1. In a large bowl, combine flour, sugar, baking powder, salt, cinnamon, cranberries, orange zest and cashews. Mix together. In a medium bowl, whisk the melted butter, egg, orange juice, milk, and vanilla extract, then pour it into the flour mixture. Using your hands, mix lightly, with very few strokes, until dough is sticky.
2. Preheat oven to 350° (about 10 minutes). Using a spoon, place twelve equal size pieces of the dough on an ungreased cookie sheet. Bake until slightly browned around the edges, exactly 20 minutes (place a toothpick into one of the scones and if comes out completely clean, then they are done!). Cool on a baking rack for 15 minutes, and add the glaze on top using a small spoon.
Making the GLAZE:
1/2 cup confectionery sugar
1 teaspoons of vanilla corn syrup (Mexican brand: Miel Karo)
1 teaspoon extra fine orange zest
1 tablespoon fresh orange juice
Mix all ingredients.

8 oz Penne Pasta 1 Cup Ham – Chopped 1 Bag Frozen Spinach 2 Cups Swiss Cheese – Shredded 1 Tbs Dijon Mustard ¼ tsp Jalapeno Pepper Sauce ¼ cup Butter ¼ cup Flour 2 cups Milk Prepare pasta. In medium sauce pan melt butter. Add flour. Stir until mixed. Add milk and stir until sauce thickens, about 5 minutes. Add pepper sauce, mustard and cheese, stir until melted. Remove from heat and mix in ham, spinach and pasta. Place in baking dish and bake at 350 for 25 minutes.

2 large eggs
3/4 cup whole milk
1/2 cup water
1 cup flour
2 tbls melted butter
Filling
3/4 cup pumpkin butter
1/2 cup mascarpone cheese
Directions
Mix milk, water and eggs together in bowl with electric mixer. Sift in flour. Add melted butter and blend.
Heat flat non-stick pan over medium heat. Drop 1/8th cup of batter down and brown on each side for about 45 seconds. Set aside to cool. Makes roughly 20 small crêpes.
Mix pumpkin butter and mascarpone together in electric mixer.
Stack crepes on top of each other, pasting them together with generous helpings of pumpkin butter-mascarpone spread.
Optional: top with whip cream and sprinkle of cinnamon.
Extra spread can be saved and used on toast, etc. Just be sure to mind the expiration on the cheese.

1 TJ Tabula Rasa Pizza Crust ½ cup Peanut Butter ½ cup TJ Ginger Scallion Stir Fry Sauce 1 tsp Soy Sauce 1 cup Shredded Mozzarella 1 cup shredded carrots 2 Tbsp Fresh Basil Bake Tabula Rasa for 5 minutes at 400F. Combine next three ingredients and spread on crust. Top with cheese and shredded carrot. Bake for 8-10 minutes or until cheese is melted and bubbly. Sprinkle with chopped basil and serve!
- 1 package of Trader Joe's mixed dried mushrooms - 5 teaspoons Better Than Bullion Chicken Stock Base - 3 tablespoons butter - 3 tablespoons olive oil - 2 shallots, chopped - 3/4 pound assorted mushrooms (such as crimini, button and stemmed shiitake), sliced - 1 cup arborio rice - 1/2 cup dry Sherry - 1/2 cup grated Parmesan cheese - 3/4 teaspoon chopped fresh thyme Reconstitute dried mushrooms per package's directions Bring 5 cups of water to a boil and stir in the chicken stock base Reduce heat to low; cover and keep broth hot. Melt 3 tablespoons butter with olive oil in heavy large saucepan over medium heat. Add chopped shallots; sauté 1 minute. Add mushrooms; cook until mushrooms are tender and juices are released, about 10 minutes. Add rice and stir to coat. Add Sherry and simmer until liquid is absorbed, stirring frequently, about 8 minutes. Increase heat to medium-high. Add 3/4 cup hot broth and simmer until absorbed, stirring frequently. Add remaining hot broth 3/4 cup at a time, allowing broth to be absorbed before adding more and stirring frequently until rice is just tender and mixture is creamy, about 20 minutes. 15 Candy Cane Joe-Joe’s Cookies, chilled 1 - 6.3 oz. box chocolate mint candy canes (12 canes) or 12 regular size red and white peppermint candy canes 1 - 12 oz. bag semi-sweet chocolate chips 1 1/2 cups vanilla candy melts 1 1/2 tsp. peppermint extract, divided Cut cookies in to chunks. Set aside and bring to room temperature. Unwrap candy canes, place in a gallon plastic zip bag and crush. Sift crushed canes through a colander into a bowl to separate larger pieces from fine crumbs. Set aside. Prepare a 10” x 15” sheet pan by covering with aluminum foil and spraying with non-stick spray. Place white candy melts in a heat safe bowl. Add 1/2 tsp. peppermint extract to candy melts and melt in microwave or over double boiler until smooth. Stir in fine candy cane crumbs. Place chocolate chips in a heat safe bowl. Add 1 tsp. peppermint extract to chocolate chips. Melt in microwave or over double boiler until smooth. Fold in cookie chunks . Drop large spoonfuls of chocolate mixture on prepared pan, smoothing with a spatula so cookies are in one layer (not clumps). Drizzle white mixture over chocolate. Swirl with a skewer or chopstick. Sprinkle chopped candy cane pieces over all. Chill until firm. Cut into 2 inch pieces. Makes approximately 36 pieces.
