Italian Chicken Sausage and Herbed Omelettes

Makes 4 omelets

Pre-heat oven to 450 degrees

1 dozen eggs
1 package Trader Joe's spicy italian chicken sausage link (chopped)
4 cubes frozen chopped basil, or 1/4 cup fresh chopped basil
1 cup Trader Joe's frozen bell peppers
2 cups Trader Joe's shredded italian 4 cheese blend
olive oil
salt and pepper to taste

1. Saute chopped sausage links in olive oil until browned, set aside.
2. Beat eggs and combine with basil, peppers, and cooked sausage. Add salt and pepper to taste
3. Heat a small non-stick skillet on medium heat, when the pan has been preheated add about a teaspoon of olive oil.
4. Using a 4-once ladle, add 1 ladle of egg mixture to pan. Turn the heat down slightly and swirl the pan until the eggs begin to set.
5. When the eggs are almost set, put the pan in the oven for about 90 seconds.
6. Remove from the oven, add about 2 tbsp (per omelet) of cheese mixture to omelet and fold.
