Spicy Potato and Kale Chowder

1/2 lb. Trader Joe’s spicy chicken sausage, thin sliced
2 tablespoons olive oil
one medium onion, chopped
2 cloves garlic, chopped
2 quarts chicken broth
2 large potatoes, peeled and cubed (about 2 cups)
3 cups fresh kale, chopped

Using 5 or 6 quart stockpot, sauté sausage and onion in hot oil until sausage is lightly browned. Add garlic and sauté for two minutes. Add chicken broth and potatoes and cover pan. Simmer over low heat for 30-45 minutes. Add kale and simmer for 15 minutes.(If broth has cooked down more than you would like, add about 1/2 cup water.)

Although this recipe cooksfor about an hour, it is really quick and simple - so, should be listed under quick recipes or gourmet? It is a really homey soup, and if you have never tried kale, this is a great way to get started.

I love this combo. When I prepare the garlic, I slice it and brown it gently in some olive oil before adding it to the chowder for a nutty flavor. I also mash up the potatoes until it is more creamy. If I don't have sausage, ham works well. Yum!
