2 Trader Joe’s Spicy Italian Chicken Sausage links (fully cooked)
1-1 pound Trader Joe’s Garlic and Herb pizza dough
1-1 pound Trader Joe’s Plain pizza dough
1 cup Trader Joe’s Sundried Tomato Bruschetta, divided
½ cup Trader Joe’s Parmesan cheese, freshly grated
1 tablespoon melted butter
Preheat oven to 350 degrees . Grease 2 - 12 cup muffin tins
Remove sausage from package and slice. Place slices into bowl of a food processor and finely grind. Add 1 /3 cup Bruschetta to the ground chicken and pulse until mixed. Set aside.
Remove each dough form it’s packaging and roll into a ball. Slice each ball in half. Combine 1 piece from each ball and knead together. You now have 2 balls of mixed dough. Gently flour a work space. Roll out 1 ball of dough to a 10 X 12 inch rectangle. Remove 1 /2 of the meat mixture and spread across the dough. Sprinkle with 1 /4 cup cheese. Roll up – jelly roll style to produce a 12 inch log. Slice the log into 12 – inch pieces. (The easiest way is to slice in half to yield 2- 6 inch pieces, slice again (4 – 3 inch pieces and so on.) Place a piece into a cup of the muffin tin. Repeat with second ball of dough. Brush top with melted butter. Place in oven and bake 20-24 minutes or until golden brown. Remove from oven and place on a platter with the extra Bruschetta for topping.

1/4 cup apricot jelly
1/2 cup honey
1/4 cup Trader Ming’s Soyaki sauce
6 chicken legs
In a large bowl, mix apricot jelly, honey, Trader Ming’s Soyaki sauce. Place chicken legs in a gallon-sized ziplock bag. Pour sauce into bag and refrigerate 30-minutes to allow chicken to marinate.
Preheat oven to 400°F.
Line a large baking tray with heavy aluminum foil. Place chicken and sauce from the bag on the tray and bake for 20-minutes. Turn chicken over and continue to cook for another 20-minutes or until meat thermometer inserted in leg registers 180°F and juices are clear when a leg is pierced with a knife. Baste carmelized sauce over chicken legs and serve.

Tuscan Pasta Salad
1 1/2 lb. gemelli or rotini pasta
1 jar (Trader Joe’s) julienned sun-dried tomatoes in olive oil, drained and oil reserved
2 cans (15 oz) plain artichoke hearts (not marinated),drained and quartered
1 jar (Trader Joe’s) roasted red and yellow bell peppers, drained and chopped
1 jar (Trader Joe’s) pitted Kalamata olives, drained and halved
1 1/2 logs fresh marinated mozzarella cheese (Trader Joe’s), diced (or crumbled feta cheese)
Fresh basil, a good handful, chopped
Balsamic vinegar
Salt and pepper
Dried oregano
Cook pasta as directed, and cool.
Add all remaining ingredients except balsamic vinegar, salt, pepper, and oregano. Stir until well combined. Add the reserved oil from the sun-dried tomatoes. Add a splash of balsamic vinegar, some salt and pepper, and a touch of dried oregano to taste. Chill.
