| Chicken Salsa Bowl with Papaya Mango SalsaPopular |
1 pouch frozen Trader Joe's Organic Brown or Jasmine Rice, or 2 cups cooked rice
1 (15 ounce) can black beans, rinsed and drained
1 cup Trader Joe's fresh salsa
1/2 teaspoon cumin, optional
8 ounces Trader Joe's Just Chicken, cut into small pieces
Lettuce, chopped
Tomato, chopped
1/2 cup fresh Trader Joe's Papaya-Mango Salsa
Lime wedges, optional
1. Heat rice according to package directions.
2. Comibe beans, salsa and cumin, heat in microwave for 2 minutes, or in saucepan for 7 minutes.
3. Warm Just Chicken in microwave for 2 minutes, or in saucepan for 5-7 minutes.
4. Place bean and salsa mixture over rice.
5. Place chicken on top of bean and salsa mixture.
6. Add chopped lettuce and tomatoes; top with Papaya Mango Salsa and squeeze lime over the top, if desired.
Serve with warmed corn tortillas or baked tortilla chips and salsa.
Serves 4.

ditch the peach salsa, add BBQ shredded chicken

Recipe was quick and easy...only prep time (cutting)....was a little sweet for me with the peach salsa, which I could have done without. My recs? 1) Regular salsa or the roasted tomato salsa from TJ's is good with the dish instead of the peach salsa 2) Instead of Just Chicken, I kicked it up a notch with the BBQ shredded chicken (in refrigerator section). Tasty! 3) add corn to the black bean/salsa mixture. Enjoy!
