Meyer Lemon Pineapple Upside Down CakePopular
This is a very simple and very delicious recipe for a lemony twist on the pineapple upside down cake.

1 Box Trader Joe's Meyer Lemon Cake & Baking Mix
2 Large Eggs
1/2 Cup Vegetable Oil
1 Cup Cold Milk
1 Can Trader Joe's Pineapple Chunks

1. Grease bottom and sides of 8x8x2 pan.
2. Spread pineapple on the bottom of the pan -- about an inch thick.
3. Follow directions on box to mix the rest of the ingredients and pour on top of the cake.

That's it! Careful flipping the cake over... Wait until it cools.

Tried this yesterday - I couldn't stop eating it! I pulsed the pinapple in the mini food processor. I also left a few table spoons of melted butter at the bottom. I let it cool overnight and it popped out no problem. Great idea!

Stay with the chunks....

I tried this recipe with rings and it wasn't as good as the chunks (great idea about putting them through the food processor.) The rings ended up a bit lumpy and stuck to the pan.
