| Somen Noodle Soup |
This soup is tasty and good for you! If you have a cold or allergies, this can be of comfort. If you like your soup chunkier, add more tofu, noodles or an extra package of shitakes. Serves 4.
2 cartons TJ's soy-ginger broth
1 package TJ's shitake mushrooms
2 tbsp crushed garlic
2 tbsp grated fresh ginger
6 scallions, sliced thin
1/2 cup tofu, cubed
4 oz somen noodles
Chopped cilantro as garnish
Warm broth over medium-low heat. Add garlic and ginger. After 10 minutes, add the rest of the ingredients except cilantro. When the noodles are limp, garnish with cilantro and serve.
