stuffed peppers spicy italian style

4 red bell peppers
Spicy Italian Chicken Sausage
1 cup Romano Cheese, grated
1/2 cup Cracker Crumbs
2 eggs, well beaten
1/3 cup pine nuts
1/2 cup chopped olives
4 oz crimini mushrooms, sliced
1 small onion, grated
1 clove garlic, mashed
3/4 tsp salt
1/2 tsp crumbled oregano
1/8 tsp black pepper
1/3 cup water
Slice tops from red bell peppers, remove seeds. Combine spicy chicken sausage, sliced and diced, romano cheese, cracker crumbs, eggs, pine nuts, chopped olives, crimini mushrooms, onion, garlic, salt, oregano, and black pepper. Blend well, and stuff inside peppers.
Place peppers side by side in a shallow baking pan and add water to pan. Cover and bake in a 350 degree oven 45 min or until tender. Serve sprinkled with additional grated Romano cheese or top with you favorite spaghetti or marinara.
