Great microwave enchiladas

I love that the tortilla doesn't get mushy like some microwave enchiladas. They are so flavorful that I didn't even miss the cheese.

Mandarin Orange Chicken

We fried the chicken pieces in oil and warmed the sauce in the microwave. It was very crispy this way. I think I will add some broccoli next time and maybe a little red pepper flakes.

Roasted Vegetable Enchiladas

Mushy, but good flavor

I really like the flavor of these enchiladas. The whole thing is very mushy though. The corn tortillas were very soft and the main ingredient in the filling was spinach. I also noticed they are very high in sodium.

Trader Jaques Beef Bourguignonne

Good flavor and nice portion size for two people. We ate it over rice but mashed potatoes or noodles would be good too. A little more beef and larger chunks of carrot would be nice.
