Gerolsteiner is high in natural carbonic acid. That is why it stays "fizzy" for so long, the carbonation hasn't been added. This mineral water comes from areas with volcanic rock that is especially rich in natural carbonic acid. The higher the carbonic acid content of a water, the higher the amount of minerals that are solubilized from the surrounding rock layers. This is truly the BEST!
