This was a great hit w/ my family. I substituted the organic blue corn chips for the corn tortillas. I cooked for 20 minutes on 350, then removed foil and did 5-7 minutes of broiling to get a nice crispy-cheese thing going on top. In addition to the sour cream, I added some of TJ's roasted garlic salsa. Delicious!

LOVED this recipe...just made it tonight and it got a thumbs up all around (even my 3yo daughter).

I took Melly's recommendation about tossing the lettuce with the dressing beforehand (great idea). The only thing I did differently was I used the TJ's Organic Mixed Herb Lettuce. I think the all the flavors in the lettuce gave it even more of a boost! I love those Tilapia filets... Thanks for a great dinner!

Love the idea of using the stew for the pot pie! Normally I use the TJ's pie crusts (both of them) and layer one on the bottom and one on the top...so, I just put the stew in the middle (2 cans was a tad much, it leaked out my pie a bit but we did not care we just scoop it all out into a bowl). I think next time I will try the pancake mix idea...that seems like it's probably even easier than the pie crusts (and no waiting for them to thaw). Thanks for the idea!

This was a big winner at Club Amaro...we love the flavor of the Mojito sauce to begin with, so this really flipped my lid! We added some nacho cheese to them (my 3 yo must have cheese!) and that was a great topper. My only complaint is with the TJ's flour tortillas...they were no match for the filling and fell apart instantly. We at these "Mex" style (tearing off a piece of tortialla and pinching up the filling). YUM YUM!!

Meyer Lemon Pineapple Upside Down Cake
Tried this yesterday - I couldn't stop eating it! I pulsed the pinapple in the mini food processor. I also left a few table spoons of melted butter at the bottom. I let it cool overnight and it popped out no problem. Great idea!
