Apple Gingerbread Cobbler1 (14oz) package Trader Joe's Deep Dark Gingerbread Mix, divided3/4 C. water 1/4 cup brown sugar 1/4 tsp pumpkin pie spice, 1/2 cup chopped pecans 1/2 cup butter, divided 2 cans apple pie filling (21oz) vanilla frozen yogurt, or ice cream Stir together 2 cups gingerbread mix and 3/4 cup water. mix until smooth set aside. Stir together remaining gingerbread mix and brown sugar; cut in 1/4 cup butter until mix is crumbly.Add pecans set aside. Combine apple pie filling, 1/4 tsp pumpkin pie spice and remaining 1/4 cup butter in sauce pan. Cook until throughly heated about 5 mins;stirring often. Spoon hot apple mixture into greased 11x7 baking dish. Spoon gingerbread mix evenly over hot apple mix, sprinkle with pecan mixture. Bake at 375* for aprox 30 mins. or until set. A bit sweet for me. Made again w/ TJ's frozen peaches & blueberries-no added sugar just cinnamon & nutmeg. Had some TJ's praline pecans & candied ginger so chopped those and added to topping and omitted brown sugar. Much better!
