Apples and Oats Hearty Biscotti
This will have you brewing the coffee while you bake them so they’re ready to eat as soon as the timer goes off! A great alternative after having had so many holiday sweets!

1 cup flour
2 pkgs TJs instant oatmeal complete Maple and Brown Sugar flavor
¼ tsp baking soda
¼ tsp salt
2 tsp Apple Pie Spice
1 stick butter, softened
¼ cup shortening
1 /4 cup brown sugar
1 egg
1 tsp vanilla
1 /2 cup TJs walnuts or pecans, finely chopped
½ cup TJs dried apple slices, coarsely chopped
Preheat oven to 350 degrees. Line a 9 inch baking dish with aluminum foil or parchment paper. Have paper hang over side edges by two inches on 2 sides.
In a large bowl combine the flour, TJS oatmeal mix, baking soda, salt, and apple pie spice. Stir to combine and set aside. In a large bowl combine the butter, shortening and the brown sugar. Beat with an electric mixer until combined and soft. Beat in the egg, vanilla and start adding the dry mixture a half cup at a time until dough is stiff. Switch to a large spoon and add in the nuts , apple and the rest of the dry ingredients and mix in as best as you can.
Pat the dough into the prepared pan and bake 25-30 minutes until done. A toothpick check in the center should come out dry.
Remove pan from oven and cool 15 minutes on a wire rack. Then lift with paper/foil handles the baked dough and place back on the rack until completely cool.
Lower the oven temp to 325. Slice the dough into 3 – 3 inch wide strips. Then slice into 1 inch bars. Place these bars cut side down on an ungreased baking sheet and bake for 15 minutes. Turn over to the other cut side and bake an additional 12-15 minutes. Remove from oven and cool on a wire rack for 5 minutes. Serve and store at room temperature. Freeze well. Yield 27 biscotti
