Avocado Egg Soy Chorizo Brunch Stacks

8 Home Browns potato patties
salt and pepper
2 Trader Joe's Hass Avocados
2 t. lemon juice from Trader Joe's Lemons
1 clove Trader Joe's garlic, minced
2 t. Trader Giotto's pure imported olive oil
1 12 oz. package Trader Joe's Soy Chorizo Sausage
16 oz. (2 c.) Nulaid Reddiegg
1 c. Trader Joe's Chipotle Salsa

Trader Joe's hot house cucumber, sliced, and mini pearl grape tomatoes for garnish

Preheat oven to 450 degrees. Place Home Browns patties on a shallow baking pan and bake 15-20 minutes or until crisp. Keep warm.
While potatoes bake, mash one avocado and dice the other. Mix lemon juice, minced garlic and salt and pepper to taste with mashed avocado.
In a medium skillet cook soy chorizo in olive oil over medium heat until warmed through. Stir in Reddiegg and salt and pepper to taste. Cook, stirring, until eggs are almost done, then stir in diced avocado and cook another minute.
Place two Home Browns on each place, then spread each with the mashed avocado mixture. Top with egg/chorizo mixture. Drizzle each stack with about 1 T. T.J. Chopotle Salsa and garnish with sliced cucumber and mini pearl grape tomatoes. Serve extra salsa on the side.
