Bacon Arugula and Mango (BAM!) Sandwich

Eight slices,Trader Joe's Hearth Oven Seeded, Sliced Multigrain bread, lightly toasted
1 bag, Trader Joe's baby arugula
1 carton Trader Joe's fresh mango slices, sliced lengthwise into thicknesses of 1/8 inch or so
1 package, Trader Joe's Center-Cut, Seasoned, Uncured Bacon or Niman Ranch smoked bacon
1/4 c. Trader Joe's Tomato Chutney
1/4 c. Trader Joe's Reduced Fat Mayonnaise
8-oz package of Trader Joe's Abundance cheese, sliced

1. Cook bacon in microwave or on stove until crisp. Drain on layers of old newspaper topped with one layer of paper towel. Use more paper towel to pat rendered fat off top of bacon slices.

2. Combine mayonnaise and chutney in bowl, mashing tomato chunks with fork if you prefer a smooth sanwich spread. Spread mixture on one side of all eight slices of toast. Arrange in pairs of similar-sized slices on four plates

3. Lay leaves of arugala on top of spread side of one toast slice on each plate. top each of the four with a layer of cheese -- 3 or four slices.

4. Lay slices of mango on top of cheese and top with 2 or 3 slices of bacon. Cover each sandwich with its mate. Hold the top of each sandwich securely to keep ingredients from sliding out and cut the sandwiches in half.

Yield: Four servings.

Delicious served with salad of seasonal fruits dressed with a one-serving carton of Trader Joe's Low-Fat Vanilla Yogurt.
