1/2 cup sour cream
1/4 Trader Joe's Pumpkin Butter
1/4 cup brown sugar
1/4 cup lemon juice
1/4 cup parsley, minced
1 cup golden raisins
1/ 2 teaspoon salt
1/2 teaspoon ground black pepper
8 medium sweet white onions, unpeeled.

In small, non-reactive bowl, mix first 8 ingredients together. Set aside
Heat oven to 375 degrees F. Place onions in a single layer in a large roasting pan and bake approximately 1 1/2 hours. Onions will be ready to come out of the oven when they are tender and the skins are golden brown. Remove skins from onions, trim ends, quarter and place in warm serving dish. Pour the pumpkin butter / raisin mixture over the onions and gently toss to coat. Serve immediately. Serves 8.
