Blueberry Tart

Easy blueberry tart - perfect with after dinner coffee or champagne!

Crust
1/2 cup all purpose flour
3/4 cup almond meal
1/3 cup brown sugar
1/2 cube of cold butter
1/4 tsp salt
1/2 tsp ground nutmeg
Mix in food processor until crumbly, press into a tart pan, prick with a fork, cover and freeze for 15 minutes. Bake crust at 375 for 15-20 minutes until light brown.

Filling
In a sauce pan combine:
2 cups fresh or frozen blueberries
1/4 cup water
boil for 5-7 minutes
add 1/3 cup raw sugar
lemon zest of 1/2 lemon
2 tbsp lemon juice
boil for 3-4 minutes
add 2 tbsp cornstarch/ 2 tbsp water slurry - let boil for 2 minutes until thick
cool slightly - add to crust
smooth 1/2 cup fresh berries on top, wait until it's cool - enjoy!!

do try the frozen blueberry tart, and you'll never bake them yourself after...this new TJ frozen dessert is fantastic.
