Breaded Eggplant Cutlets

Ever have the eggplant parmigiana at the Olive Garden? I made an absolutely delicious replica of this dish using these breaded, sliced eggplants, TJ's marinara, and TJ's grated parmesan over pasta. I am really not much of an eggplant fan but these baked up so nice and crispy. The flavor was wonderful, not bitter at all the way eggplant can sometimes be. This is one product I will be stocking up on.

These are great. I am a huge fan of convenience cooking. Seems like every time I try to "bread" something myself, it never comes out as good restaurant style. The breading stays put, and the flavor is good. I like to serve it with TJ's tomato and basil marinara and serve over TJ's organic whole wheat pasta. Yum!

Just love these eggplant cutlets.I always have them on hand. They make a delicious, quick side dish, or easy Eggplant Parmigiana;(Marinara Sauce and mozzarella cheese also available at T. Joe's.)

These are great. Very convienient when you don't have time to make dinner. I just broil these on both sides until they get cripspy, add a slice of cheese and put it on top of pasta with some sauce. They have a little peppery kick to them too.

I love these, and almost have some in the freezer. They disappeared from the shelves for a little while, but I am happy that they have returned. I bake mine, throw one or two on top of some cooked spaghetti and top with marinara sauce for a quick and satisfying dinner.

I adore this product. It's probably my favorite thing in the frozen section, and I stock up every time I'm able to make hte 90 minute drive to a TJs.

I was so pleased with myself when i made a version of Eggplant Parmigiana with this product that I called my mom on the East Coast to brag..lol

These are AWESOME! I crisp them up in the toaster oven, and serve them with some tomato sauce to dip them in. I've also twice layered them into lasagna... I left out the ricotta and thickened up the tomato sauce... The eggplant didn't sog out!

These cutlets cooks up easily and quickly. They are so yummy w/ spaghetti and marinara sauce. My husband said to buy them every time I go to Trader Joe's.

If you like/love eggplant (especially eggplant parm) this frozen secret will do wonders for you. I thought it'd take the time out of making eggplant parmesan, but to be honest, heating these up and eating them plain is just as grand!

These are really good. I served them as an appetizer last night with a bowl of spicy marinara to dip them in. Tasty!
