Brussels Sprout Pancetta Pizza

Your favorite pizza dough
4 cloves garlic
2 T. olive oil
4 brussels sprouts, end chopped off, and leaves separated in to bowl
1 c. gruyere cheese, shredded
1 c. 4 cheese Italian blend
olive oil to drizzle
kosher salt to taste
2 oz. diced pancetta
freshly grated lemon zest if desired

Preheat oven to 475 degrees.

Slice garlic and saute in olive oil until translucent. Roll out dough to a 10" circle and par bake for 4 minutes. Remove from oven and brush with garlic oil placing garlic slices evenly over the crust. Top with cheeses, sprout leaves, pancetta. Drizzle with olive oil and sprinkle with salt. Bake for another 10-12 minutes until cheese is bubbly and sprouts are brown and crispy. Remove from oven and let sit for 3 minutes before slicing. If desired, zest a lemon over the top of the hot pizza. Enjoy!
