Cabbage with Spicy Chili and Lime Peanuts

1 medium to large cabbage - shredded
1/4 - 1/2 cup liquid (water or white wine or veg broth)
1 medium onion - diced
2 carrots - grated
1 Cup nonfat or lowfat plain yogurt
Extra Virgin Olive Oil
1 Cup TJ's Spicy Chili & Lime Peanuts - food processed until fine but with some chunks
salt and pepper to taste

In large sautee pan with lid heat the olive oil over medium head, add onions until translucent, add carrots (about a minute) and then cabbage, liquid, salt and pepper and cover about 5-10 minutes until cabbage is soft.

Add yogurt and stir in well (helps give a nice creamy texture) and then stir in spicy C&L peanuts.

Garnish with chopped fresh parsley and more whole peanuts (with all the lovely spices, chili and lime leaves it comes with)

I serve it over white or brown rice.

The whole recipe shouldn't take more than 20-30 minutes...and gets way better the next day!!

This is an amazing winter/spring dish!! Oh, fuddle-dee-dee it's plain good any time of the year you can get your hands on a good cabbage!!!

Organic ingredients is best! :-)
