Cheesy Chipolte Chicken Enchilada CasseroleTrader Joe's Shredded Nacho Cheese BlendTub of Chicken en Chipotle (fresh section) Corn Tortillas Salsa Authentica In a small casserole dish, spray with non-stick pan spray. Spread with a thin layer of salsa. Lightly spray the corn tortillas with pan spray, or dip them in salsa. (You just need something to moisten the tortillas). Layer a few tortillas to cover the salsa layer. Then add some of the Chicken en Chipotle and top with cheese. Repeat. Heat at 350 for about 20 minutes until the cheese is bubbly. I love using TJ's pollo asada for this - grill it up while you're dipping your tortillas and you'll be ready to roll them up when you're done!
I also added a tub of TJ fresh mild salsa to the filling and the topping. Gives a lot more flavor than just the Salsa Autentica. bymafoley, May 23, 2007
