Chicken curry Over Polenta

Easy recipe!

Ingredients (you choose the amounts. It really doesn't matter): Boneless, skinless chicken thighs (or breasts), your favorite veggies, Trader Joe's Thai green, yellow, or red curry sauce, and Trader Joe's Organic Polenta

Stir-fry up the chicken in one pan and the veggies in another for best results. This time I used baby bok-choi that I also got at TJ's, together with some cauliflower that I got at the farmer's market. Last time I used eggplant and green peppers. It all works. I used cooking spray for the veggies and no seasonings at all.

Then put the vegetables into the pan with the chicken and pour on the simmer sauce to taste and heat till bubbly. Slice up some polenta and heat it up any way that works. I use the toaster oven. Pour the curry mixture over the warmed-up polenta and enjoy!

I also use TJ's frozen organic brown rice, but I've submitted the polenta version because I've never seen a polenta curry recipe before. It really works!
