Cindys Fruit and Nutty Winter Raspberry Vinaigrette SaladIngredients:1/4 cup TJ Raspberry Vinaigrette 1/2 cup fresh cherry tomatoes 1 package Trader Joe's Organic Romaine Salad 1/4 cup dried cranberries ( and a hand full extra for the salad topping) 1/4 cup of pine nuts 1 /4 cup almond slivers 1/4 cup Trader Joes freshly grated Parmesan cheese Directions Wash and slice romaine lettuce and put into a large mixing bowl slice each cherry tomato in half and add to the lettuce, add in almonds, cranberries and pine nuts and toss with two wooden salad spoons after that add in almost all of your grated Parmesan cheese but save some to top off the finished salad. Toss again with the wooden spoons. If you are going to serve the salad immediately then you can add the Raspberry vinaigrette right away if not you can cover the salad with saran wrap and put it in the fridge, you will need to add the dressing right before you are ready to serve so salad does not get soggy . After adding the Raspberry Vinaigrette you can toss again , To finish top off with a little more grated Parmesan and a few dried cranberries. If you want to turn my salad into a summer salad you can take a fresh clementine and add pieces right on top it is refreshing , Delicious and so healthy !
