Cranberry Orange Scones with Sesame Covered Cashews
These scones are simply to die for! The combination of the selected ingredients are of the best quality there is! Grab a cup of your favorite coffee and enjoy to the fullest!


INGREDIENTS:

2 cups all purpose flour
2/3 cup light brown sugar (Trader Joe's)
3 teaspoons baking powder
½ teaspoon of salt
½ teaspoon ground cinnamon (Trader Joe's)
1 cup dried orange flavored cranberries (Trader Joe's)
1 cup sesame covered cashews (Trader Joe's)
2 tablespoons of orange zest
6 tablespoons of butter
1 organic extra large egg (Trader Joe's)
½ cup natural Silk Soy Milk (1-2 tablespoons more if needed)
2 tablespoons of natural orange juice
1 ½ teaspoons Mexican vanilla extract


PREPARATION:

1. In a large bowl, combine flour, sugar, baking powder, salt, cinnamon, cranberries, orange zest and cashews. Mix together. In a medium bowl, whisk the melted butter, egg, orange juice, milk, and vanilla extract, then pour it into the flour mixture. Using your hands, mix lightly, with very few strokes, until dough is sticky.

2. Preheat oven to 350° (about 10 minutes). Using a spoon, place twelve equal size pieces of the dough on an ungreased cookie sheet. Bake until slightly browned around the edges, exactly 20 minutes (place a toothpick into one of the scones and if comes out completely clean, then they are done!). Cool on a baking rack for 15 minutes, and add the glaze on top using a small spoon.


Making the GLAZE:

1/2 cup confectionery sugar
1 teaspoons of vanilla corn syrup (Mexican brand: Miel Karo)
1 teaspoon extra fine orange zest
1 tablespoon fresh orange juice

Mix all ingredients.
