Creamy polenta topped with pulled pork and toasted pepitas

1 tube Trader Joe's polenta
2/3 cup (or more) milk or half n half
3 tbs (or more) butter
salt, to taste
1 tub Trader Joe's shredded BBQ pork
2/3 cup pepitas
1/2 cup grated parmesan cheese (or any mild, white cheese)

Heat polenta on stovetop, mashing with milk, butter and salt, to desired taste & consistency (should have consistency similar to lumpy mashed potatoes). In a shallow pan over high heat, toast pepitas until slightly brown, stirring frequently. Heat shredded pork on stovetop or microwave.

Spread polenta on dish or shallow bowl. Top with shredded pork. Sprinkle with pepitas and grated cheese.
