Curried Peas1 bottle yellow curry sauce1 can light coconut milk 2 bags peas 1 pkg firm tofu Set peas on counter to defrost briefly, while gently heating the coconut milk and curry sauce together. Drain firm tofu well, and cut into bite-sized cubes. Add peas to curry mixture and continue to heat. Add tofu and continue to heat approximately 15 - 30 min. Serve as a main dish with salad, or as a side dish. This freezes well in individual servings for quick meals. don't judge a book by it's cover- this may be the yuckiest color yellow you will ever see, but it is completely delicious and satisfying!
tofu is eh, peas are good. yellow curry sauce is delish. put them together and it is the most WONDERFUL and satisfying combonation of a dish! don't be fooled by it's color |
