Deceptively Delicious CalzoneIngredients:1 bag of Trader Joe's fresh pizza dough 1/2 cup of Trader Joe's raw cashews 1/4 cup of Toffuti Cream Cheese Juice of half of a lemon 1/4 cup of chopped flat leaf parsely 1 Tbs of white wine vinegar 1 Tbs of tomato paste 2 garlic cloves 1 bag of Trader Joe's Chicken-Less Strips Olive oil Salt and pepper to taste 1. Preheat oven to 425 degrees. Split pizza dough into two even pieces. Stretch out both pieces as though you were making two pizzas. 2. In a food processor or blender, combine cashews, cream cheese, lemon, parsely, vinegar, tomato paste and garlic. Pulse a few times and then slowly add some olive oil and salt and pepper to your liking. Process all ingredients until a paste is formed. 3. In a medium sized skillet, heat a couple table spoons of oil over medium heat. Once oil is warmed, sautee a bag of the Chicken-Less strips until golden brown. Cut strips into smaller pieces or shred; whatever you like. 4. In a bowl, comine the cashew mixture with the strips. Split the mixture even between both pizza dough pieces and spread evenly. Leave a small border around the edge of the pizza dough. 5. Fold the pizza dough over into a half moon, or any shape that you can seal the dough shut. Use a fork and press down around the edges to seal the half circle part closed. 6. Poke a couple holes in the top of each calzone. Drizzle olive oil on top and sprinkle with salt and pepper or bread crumbs (optional). Place on a cookie sheet, pizza stone or whatever you like to use. Bake the calzones for 20-30 minuts or until the crust is golden brown. This is a delicious meal that is full of protein and flavor and at the same time - animal free.
