Grilled Feta and Zucchini Bruschetta1 Package Crumbled Feta (regular)3-4 Medium Zucchini 1 Container Fresh Bruschetta Sauce 1 - 2 Tbls EVOO Salt, Pepper, TJs 21 Seasoning Blend 1 TJs Herb Foccacia Bread Prepare Gas or Charcoal grill at low to medium heat. Slice zuchini in strips lengthwise. Toss in olive oil with salt, pepper and a few shakes of 21 seasoning blend. Place on grill for about 5 minutes total, turning once. While zuc is grilling, slice the foccacia lengthwise. Heat oven to broil (low if that setting is available). Chop finished zucchini into about 1/2 inch squares, toss with bruschetta sauce and spread onto bread. Top with feta. Place in oven on cookie sheets. Stand by and look for slight browning of the topping along with melting of the cheese. Cut into squares and enjoy!
