Hearty Italian Tuscan Bean and Sausage Stew

You must try this, there is nothing that tastes better than this and a loaf of crusty french bread. An instant classic in my family, substitute sausage with frozen chicken breast for a healthier alternative.

Ingredients:

4-5 Sweet Italian sausages (Trader Joe's uncooked)
1 - 32 oz carton chicken stock (from Trader Joe's only, low sodium, $2.
1 - Trader Joe's 28 oz can plum tomatoes, diced or whole (hand crush)
1 can Trader Joe's Tuscan White beans (cannellini beans), rinsed
1 can Trader Joe's sweet corn, drained
1 bag Trader Joe's french braising greens (or southern greens)
1 russet potato, 3/4 inch cubes (you can substitute penne pasta)
3 cloves garlic, whole or minced
1 large onion, diced
2 tsp dried thyme
2 tsp red pepper flake
4 tbsp olive oil
Trader Joe's pecorino romano cheeze, grated
Salt and pepper to taste

In a heavy medium stockpot:
Fry garlic and onions in olive oil until slightly brown. Add sausage (whole) and brown on both sides. Add tomatoes, potatoes, and 3/4 o the chicken stock. Add a little salt and simmer for 20 minutes. Now add braising greens, white beans, sweet corn, red pepper flake and thyme. TASTE and season with salt... Cook for an additional 20 minutes or until potatoes are tender.

This recipe changes every time I make it, adjust it to your liking. I always garnish with grated pecorino romano, fresh ground black pepper, and most importantly, a drizzle of extra virgine olive oil. Serve warm toasted french bread on the side.
