Iggys Hippie Rolls3 Applegate farms Organic Sweet Italian Sausage .1 each of red and yellow pepper sliced into strips 1 small thinly sliced onion 10 fresh basil leaves . 2 frozen puff pastry sheets, thawed . 3 Applegate farms Organic Fire Roasted Red Pepper sausages . 1 cup of shredded mozzarella cheese Optional side of ready made sauce for dinner sauce Directions # 1 lightly sauté onion and peppers together till slightly wilted set aside to cool #2 The oven must be preheated to 350 degrees F. #3 Lay the puff pastry sheets out on a flat work surface (cover with parchment paper first. #4 Split the sausage casings lengthwise & turn the Sweet Italian Sausage out onto 1 pastry sheet & Fire Roasted Red Pepper sausages meat out onto the other pastry sheet. #5 Gently pat the meat out to fit the pastry sheets, being careful to leave a 1/2-inch strip bare on both long sides of each sheet. #6 add onion and pepper mixture on top. #7 divide half of the mozzarella cheese & 5 basil leaves per sheet. #8 Starting with 1 of the bare strips, roll the pastry tightly around the filling. #9 The bare strip on the far end will stick to itself (the roll). #10 Place the rolls in the freezer (wrap in parchment paper) for at least 1 hr; they should be just frozen enough to make slicing easy. #11 (The recipe can be made to this point 1 week in advance. #12 Slice the rolls into 1-inch pieces, place on baking sheets & place this in the oven for 20 to 30 mins, or until golden brown. #13 Remove & let cool 5 mins before serving.
