Jens Amazing Blueberry Cobbler

Amazing in that it is quick and low calorie.
I used most ingredients purchased at Trader Joe's. I did use I can't Beleive its not Butter Lite, but you might want to alter it to your taste/liking (though it will probably bring up the calorie/fat content)
crust:
2 cups servings of cinnamon puffins grinded

4 tbsp I can't Believe its not butter Lite
1 tbsp blue agave

Filling:
2 cups frozen blueberries thawed
2 tbsp Agave syrup
1/4 cup Shredded sharp cheddar cheese
To make crust:
1. Mix cereal crumbs
agave and melted butter (margarine or ICBNB)well blended . Press mixture into an baking dish ( I used a 3 cup glass pyrex dish)
2. Bake at 375 degrees F (190 degrees C) for 7 minutes. Cool (I actually skipped this process, but it should be done).
Filling:
I just covered the crust with blueberries, drizzled the Blue Agave and sprinkled the cheese on top. I then baked it in the oven at 375 for another 20 minutes or so (or until cheese is nicely melted).
Note: I used my blender to grind the puffins cereal. It came out real fine like powder.
mix it with the melted ICBNB Lite and 1 tbsp Blue Agave
serving (as prepared): 6
per serving: 150 calories
6 g fat
4 g dietery fiber
Weight Watchers: 3pts.

When I read this recipe I was excited. Using the puffins to make a gluten free dessert sounded great. Did you actually taste the crust? It totally destroyed the dessert. While my friends pondered the cheese/blueberry combination, the totally agreed that the crust ruined the whole thing.
We should all stop catering to people with their personal dietary problems. Let's create delicious foods, and leave those who are restricted make the adjustments. If we all created a low sodium, low calorie, gluten free, non-dairy, low carb, non sugar, recipe, then it would be called "Air"!
