Lamb over Mushroom CouscousAll the ingredients in this very gourmet meal came from TJ and took only 15 minutes to prepare.Ingredients: 1 pkg TJ Burgundy Pepper Boneless Leg of Lamb 1 c TJ whole wheat couscous 1 Tbsp olive oil 1 c sliced mushrooms 1 c chicken broth 1 Tbsp butter or margarine Prep: 1. Pan-fry lamb in olive oil according to package directions. 2. Meanwhile, melt butter in a small pot, add mushrooms and cook until soft, about 5 minutes. 3. Add chicken broth and bring to a boil. Stir in couscous and take the pot off the heat. Cover and wait 10 minutes. 4. Fluff the couscous with a fork and serve with lamb pieces on top.
