Mango Ginger Chicken Roll UpsMakes 3-4 Flatbread Sandwiches / 6-8 servings (or 3-4 servings if you eat like me J)1 pkg Whole Wheat or Regular Trader Joes Flatbread 2 cans Trader Joes Chicken (or Turkey of you prefer) 1 Jar Trader Joes Mango Ginger Chutney 1 Pkg Trader Joes Green Onions, chopped whites and 3" or so of green 1 Pkg Trader Joes Lite Cream Cheese * New product (or Regular) 1 Pkg Trader Joes Arugula or Baby Spinich (your preference) Garlic, Trader Joes 21 seasoning, etc, to taste Bring Cream Cheese to room temperature. Combine Chicken (drained), Onions, Cream Cheese (leave about 1/4 block extra). Add Chutney to make a thick but spreadable consistently. On the flatbread, cover 2/3 with filling mixture, top with some arugula, spread a little of the left over cream cheese at the other end as a “glue”. Roll tightly without tearing. Wrap in plastic wrap in the refrigerator for a couple of hours to set. Cut each roll in half and serve. These rich and tasty rollups are a breeze to make but gourmet enough to impress. It's a great idea for the flavorful Mango Ginger Chutney and any leftover chicken you might have lying around.
While the original recipe is great, we were inspired to tweak and substituted spinach for arugula and Just Grilled refridgerator ready chicken breast strips for canned chicken. We considered using flavored wraps but quickly changed our minds after tasting the rich combo of the chutney, cream cheese, green onions (a must) and chicken. We added just a dash of the seasoning and a generous portion of spinach leaves (which were also a fancy decoration for the serving plate.) For the palates of our younger tasters, we skipped the spinach and green onions and substituted the Apple Cranberry Chutney for the Mango Ginger. That was a modest hit but I guess it takes older gourmands to really appreciate this rollup. |
