Matcha Green Tea Cake and Baking Mix
A quick mix requiring only eggs, butter and water. The ingredient list is reassuring: nothing too weird or chemical. The mix goes together quickly and the green tea flavor is nice.

Serving this alone won't get you any praise. It's nice, but a little boring. The tea flavor could be a bit stronger, but has been pared down, probably, due to the unfamiliar (to our American palates) and slightly bitter taste of green tea.

Something sharp and acidic such as apricot or raspberry jam or fresh fruit pair nicely with the cake. Sliced almonds sprinkled on top before baking would add a bit of texture and flavor.

I added dried cranberries and chopped walnuts(or pecans)in the mix before baking. Positive results. Also, use TJ's lemon curd on the side, DELICIOUS!
But the cake tastes fine. Am really glad that the direx don't call for a whole stick of butter, like some of the other TJs boxed cakes do.

I'd try this again, next time w/some doctoring to oomph it up. Slivered almonds (or an almond flavored icing) might be good, or poppy seeds? Also wonder if it'd be possible to sub light olive oil for some of the butter.

mixing some of the TJ's mango sauce with some light whipped cream? A dollop of that on top goes quite nicely together!
I like green tea. I like cake. I don't like this mix one bit.

this one is in the history books. Try the gingerbread in the same size box. Its great.
