Mediterranean Stuffed Chicken Breast

These split chicken breasts are stuffed with feta and mozzarella and a sort of marinated blend of red onions, olives, croutons and peppers. They are sold prepared in the refridgerated section for $5.99/lb.

The whole family liked this and it was easy to prepare, although I had to double the directed time to make sure the chicken was cooked through.

With the heat of summer, next time I might slice it onto a nice salad for a light and cool meal.

I personally did not enjoy this at all. The chicken was fine but the stuffing was semi bland and very heavy. The cooking time took way longer than what it calls for. I would not consider buying this again.

I bought these with really high hopes for an excellent dinner. My hopes were dashed-these were not very good at all. I don't know what I was expecting-maybe something more greek style-but these were not very good. They had flavor; just not a good one. I won't be buying these again.
