Meyer Lemon Pineapple Upside Down Cake(4 votes)Rate this listing This is a very simple and very delicious recipe for a lemony twist on the pineapple upside down cake. 1 Box Trader Joe's Meyer Lemon Cake & Baking Mix 2 Large Eggs 1/2 Cup Vegetable Oil 1 Cup Cold Milk 1 Can Trader Joe's Pineapple Chunks 1. Grease bottom and sides of 8x8x2 pan. 2. Spread pineapple on the bottom of the pan -- about an inch thick. 3. Follow directions on box to mix the rest of the ingredients and pour on top of the cake. Tried this yesterday - I couldn't stop eating it! I pulsed the pinapple in the mini food processor. I also left a few table spoons of melted butter at the bottom. I let it cool overnight and it popped out no problem. Great idea!

I tried this recipe with rings and it wasn't as good as the chunks (great idea about putting them through the food processor.) The rings ended up a bit lumpy and stuck to the pan.
