Mushroom Risotto

Good, but a bit short on mushrooms. I usually sautee some Baby Bellas first, add the cooking liquid instead of the water (as recommended on the package), and stir in the cooked mushrooms before serving.

Makes an excellent side dish, though.

My husband and I LOVE this. I could probably eat the whole bag! I do add a little extra virgin olive oil and some parmesean for added creaminess and richness. YUMMY
After cooking, add the tiniest bit of white truffle oil, and this frozen meal goes from "eh" to "Oooh!" And this dish is ready in less than ten minutes. I think the package says five, but I still have ice chunks at the five minute mark. Definitely fewer than ten minutes, though...which us still great.
