Organic Pumpkin Roll

Beautiful and Healthy made with Trader Joe's Organic Pumpkin

Oven Temp: 350 Cooking time: 15 min

3eggs
1 cup sugar
2/3 cups Trader Joe's Pumpkin
1 tsp. baking soda
1/2 tsp. cinnamon
3/4 cup flour

Beat above ingredients until smooth. grease 17 X 11 glass pan and line with wax paper. spread mixture on wax paper and badke at 350 for 15 min. Invert onto tea towel, that has been sprinkled with poweredsugar. Roll up with tea towel and coool for 1 or 2 hours. Remove wax paper and spread filling* over cake. Roll up again. Refrigerate for a few hours and slice.

*Filling:
8 oz. cream cheese
1 cup powered sugar
2 tbl. of soft butter
2 tsp. vanilla.

Beat all ingredients together until smooth. Spread over cake, roll up as above.
