Ginger Molasses Chocolate Ice Cream Sandwiches

1 box Trader Joe's Deep Dark Gingerbread Cake & Baking Mix
1/2 cup (1 stick) unsalted butter, melted
1 large egg
1/2 cup crystallized ginger, chopped
1 pint premium chocolate ice cream
Preheat oven to 375degrees F.
In a large bowl, combine and mix gingerbread mix, butter, and egg until thoroughly incorporated. Fold in crystallized ginger. Roll dough into 2-inch balls. Bake on cookie sheet for 6-8 minutes. Transfer to a wire rack and allow to cool completely.
To assemble ice cream sandwiches: Allow chocolate ice cream to soften for 5-10 minutes. Spread desired amount on one ginger cookie and top with another cookie.
Serve immediately or wrap each ice cream sandwich in plastic wrap and place in freezer until ready to serve.
