Fire Roasted Summer Corn Salad

1 Bag Frozen Fire Roasted Corn
1/4 Cup Chopped Fresh Mango
1/4 Cup Chopped Cilantro
1/4 Cup Diced Red Onion
Opt. 1/2 Cup Chopped Fresh Fennel
Juice of 1/2 Grapefruit
2 Tablespoons of Extra Virgin Olive Oil
2 Talespoons of Honey
Salt & Pepper to Taste
Defrost Corn, mix all together and Refrigerate. Can be made a day ahead of time, let sit at least one hour for flavors to marry.
Great for BBQ and Pot Lucks....

the corn is pretty good..you can definitely taste the fire roasted part and that is the best part! when you make it in the refrigerator it's a little soggy and not as crisp as real corn
