Marinated Chipotle Chicken Skewers
This is one of our favorite quick dinners because it's delicious chunks of chicken on skewers you just pop into the oven and serve with some rice and veggies (we love to eat these with the Cuban Black Beans.) It's a healthy, sorta-fancy everyday dinner that's quick too.

I bought these and I still haven't got rid of them. . . the meat is not tender and the flavor isn't that great either

stick them in the oven for 18 minutes and they come out pretty tasty. be sure not to over cook them though. 2 of them with some veggies and some tj's brown rice = a perfect and very healthy meal. makes for a good lunch with the left overs the next day!
